      Gihei is a small forge founded in 1928 by Kouhei Hosokawa, in the city of Sanjo, Niigata Prefecture. Currently, it employs two people, the son and grandson of the founder Atsushi and Takashi Hosokawa. The forge is known for the production of excellent knives. Made of steel with top hardness such as ZDP-189 and HAP-40. Due to the high hardness of these steels, knives made of them are one of the best in terms of durability on the market. The knives are subjected to heat treatment which guarantees a hardness of 65-66 HRC.
